Is it sacrilegious to cook tofu with actual chicken?

Anyway….Friday’s delicious meal:
- 4 ounces boneless skinless chicken
- 3 ounces Nasoya Extra Firm tofu
- 2 cups Japanese stir fry mix (Publix)
- bean sprouts
- extra mushrooms

I crossed off two of my May goals early this month…try tofu and cook a new recipe. And I’ve kinda fallen in love with tofu. This opens a lot more recipe doors without substituting meat into vegan recipes. Now if only a local store sold seaweed then I could make miso soup instead of buying the high sodium prepackaged stuff.

What my dinner looks like in the pan because I end up stinking at the whole presentation of dinner thing since I eat alone.

6 ounces boneless skinless chicken
Handful of bean sprouts
Frozen Birds Eye broccoli stir fry mix

Not pictured: couscous

Went slightly over my carbs today but still under in calories.

Pictured:
- Spinach lasagna
- Homemade egg rolls (tofu, bean sprouts, broccoli slaw, onions)

Not pictured:
- fruit salad
- regular salad (7 portions)
- chicken stir fry
- all the cleaned dishes and cutting utensils
- the 5 hours spent in the kitchen this morning

Yesterday ended vacation eating and today starts back on non-takeout food and tons of vegetables and fruits. I’m determined more than ever to mix foods and workouts up to try to lose weight again. Here’s to hoping my body agrees.

Sidenote: Gym this afternoon. First run since Indy. I’m looking forward to it.

Dinner. I know only a few of y’all are friends with me on Facebook, so you’ve seen my Passover pictures. But this meal is my absolute favorite dinner meal. It comes in number 2 in overall Passover meals (nothing beats matzah brai—-matzah and egg mixed together).

This dinner weighs in at about 175 calories per pizza. Obviously I’m ignoring carbs…it’s hard to count during Passover because matzah has quite a bit in it.

Super delicious is all I can say about tonight’s dinner. :-D

Friday in bullets

  • I spent the day uploading stuff to Youtube to finish off my contract job (yay!)
  • I did not do C25K W1D3 today like originally planned. (see above)
  • I spent the afternoon working on job applications and job searching
  • I scanned in my transcripts and worked on my final draft to submit for a job application (spent entirely way too much time last night on this….)
  • I spent yesterday looking at patterns on Ravelry.com while working on Youtube uploads; I discovered several knitting patterns that I can use to get rid of some of my overstock of yarn (overstock is an understatement). Today I printed a few of those patterns and am going to go to town on them this weekend (with pictures!).
  • I got to cook my banana baked oatmeal today!

This weekend:

  • outdoor C25K W1D3 run
  • flea market scrounging
  • knitting
  • thesis
  • next week’s to do lists
  • religious school
  • avoiding job applications like it’s my job, haha (next week will be devoted to that)

Salad with hard boiled egg, 6 ounces of spiced chicken, and 2 tbsp. of croutons. No dressing.

Carbs are only 25 grams! (primarily from the veggies as the croutons have very little)

Definitely on the menu again.

Lowering my carbs even more and still getting in 1200 calories has proven difficult, but the bright side is the higher dosage of metformin isn’t destroying my stomach like it did initially.
